Mama Sita`s Sweet and Sour (escabeche)

Extracted from the powdery coating of annatto (Achuete/Achiote) seeds, annatto powder imarts a mildly sweet flavor and an appetizing color ranging from yellow-orange to red-orange (depending on the quantity used) to a variety of dishes.
